Wheat is a topic I will focus on a lot. So much so that I was unsure what aspect of it to cover first as it has such a broad reaching impact on everything. I figured a good place to start is why it's such a problem in the first place.
Think about the average persons daily eating habits. Toast or cereal for breakfast, maybe a muesli bar for a morning snack, a wrap or roll for lunch, biscuits for afternoon tea and pasta for dinner. Wheat, wheat, wheat, wheat and wheat. Day in, day out for 20, 30, 40, 50 years. Imagine eating any other food at every meal, every day, year in, year out. The human body needs variety, we evolved in a seasonal environment with eating habits changing accordingly. This is not even covering things like gluten which is obviously becoming a problem for a lot of people.
Wheat has been engineered to give it properties that increase yield and make it easier to bake and is so cheap that it is put in everything! Bread, pasta, noodles, cakes, pastries, crackers and such are the obvious ones, but it is also in processed meat, salad dressings, sauces, chocolate bars, ice cream and even natural flavour! All of this was done with no thought as to how this newly engineered wheat might affect our health.
Then there's the gluten, lectins, phytates, gluteomorphins and don't forget the pesticides and herbicides used on grains which themselves could explain the rise in Cealiac's Disease. I will cover these another time.
Now that you've been eating wheat 2 or more times a day for 20+ years you have almost certainly developed an immune response. You may get headaches, bloating, indigestion, sore joints, fatigue, poor focus or many other symptoms which you've dismissed as part of life or just plain bad luck. I would strongly suggest cutting out all grains for a period of at least 2 weeks to see if your symptoms clear up.
The unfortunate thing is if you have an immune response your body will react to wheat for the rest of your life, this is according to world renowned gluten expert, Dr Tom O'Bryan. Once you have developed the anti-bodies to wheat any exposure will bring back the symptoms. Just to make you aware, products labelled "gluten-free" generally have a very minute amount of gluten which again, may bring back symptoms.
